Tofu scramble on toast

Guess what we have here? Scrambled tofu!! This is my first attempt and I really loved it. What's most surprising is the texture of the tofu when crumbled, really does mimic scrambled eggs. Tofu is high in protein at between 13-16g / 100g so in my 160g there was 20+g protein. It can lower our LDL or lousy cholesterol too. 

 

Ingredients for 1:

160g tofu , broken into small pieces 

2 cups spinach, finely chopped

1/2 tsp tumeric, ground

1/2 tsp corriander, ground 

1/2 tsp cumin, ground

2 tsp garlic oil 

2 tsp spread dairy or non dairy 

1 slice of Lo-fo Bread (you could have 2 if you're hungry ;))

 

Method:

1. In a frying pan on medium heat heat up the oil  

2. Add spinach and tofu and cook, stirring occasionally. 

3. Add margarine or non dairy spread and tumeric, coriander, salt and cumin

4. Continue to cook, stirring occasionally for 5 minutes 

5. Serve with toast

160g tofu is low FODMAP 

Spinach is low FODMAP 

2 slices of bakers delight lo-fo bread is low FODMAP .
