Tacos - Vego Style

Ingredients for 4:

1 tin of lentils, rinsed

1 tin of tomatoes 

1 tsp cumin, dried

1 tsp coriander, dried 

1/2 tsp chili, dried

2 tbs garlic oil 

2 cups lettuce, shredded 

2 tomatoes, diced 

1 cup of shredded cheese

1 cup of Greek yoghurt 

1/2 avocado 

Salt to taste



1. Heat oil in a saucepan/frying pan

2. Add spices and stir with wooden spoon for a minute 

3. Stir through tinned tomato and cook for a few minutes 

4. Add tinned lentils to the tomato mic and allow to cook for 20-30 minutes or until it’s reduced. Keep a watch and stir occasionally to prevent it from sticking

5. Heat oven and cook tacos according to the instructions on the pack 

6. Assemble tortillas and tacos with lentil mix, salad, cheese and yoghurt .


Low FODMAP info for those with IBS:

1/2 cup rinsed lentils is low FODMAP 

Spices are low FODMAP 

50g regular cheddar cheese is low FODMAP 

1/8 avocado is low FODMAP 

200g Greek yoghurt is low FODMAP 

Lettuce is low FODMAP 

1 tomato is low FODMAP .
