Roasted Chickpeas

1 Tin of chickpeas 

2 tablespoons garlic olive oil

3/4 tsp salt

1.5 tsp ground cumin, could also use any herbs or spices you like - Rosemary, thyme etc



1. Preheat the oven to 200 degrees

2. Rinse chickpeas in a strainer under running water

3. Using paper towel, dry the chickpeas 

4. Place chickpeas on a tray. Drizzle with oil, salt and spices and massage in

5. Roast the chickpeas in the oven, shaking them every 10 minutes. C

6. Cook for about 30 minutes or until brown and crisp on the outside. Best served warm. 1/4 cup is a serve size per person 


Info for those with IBS on the low FODMAP diet:

1/4 cup chickpeas is low FODMAP 

Garlic oil is low FODMAP 

Cumin is low FODMAP .
