Open Sourdough Melt

Ingredients for 1:

1 sourdough bread roll

60g mozzarella cheese

1 cup of baby spinach

1 cup of rocket

1 tsp Garlic oil 

1/2 cup cherry tomatoes 

1/8 avocado 

 

Method:

1. Slice bread roll in half and grill bottom side up

2. Drizzle bread with garlic oil and place under the grill again until lightly brown

3. Scrape avocado on toast, then place baby spinach, rocket, tomato and finally mozzarella

4. Grill until cheese melts 

 

Low FODMAP information for those this IBS:

1/2 cup tomatoes is considered low FODMAP 

Spinach and rocket are low FODMAP 

60g mozzarella is low FODMAP 

Bakers delight sourdough is low FODMAP too

Garlic oil is also low FODMAP 

1/8 avocado is low FODMAP
