Lentil Soup

Ingredients to serve 4-5

1 tbs garlic oil 

1 tin lentils, drained 

2 carrots, roughly diced

3 potatoes, roughly diced 

2 tbs curry powder 

1.5L vegetable stock (Massels 7 vegetable stock doesn't contain onion or garlic)

1 sprig rosemary, finely chopped 

1 sprig thyme, finely chopped 

2 tsp turmeric, ground 

2 pinches salt 

8 tbs coconut yoghurt 

 

Method:

1. Preheat oven to 180 degrees 

2. Place all ingredients in crock pot and cook in oven for 2.5 hours

3. Remove from heat and serve with coconut yoghurt 

 

 

Low FODMAP info for those with IBS: 

50g lentils is low FODMAP

All other ingredients are low FODMAP 

125g coconut yoghurt is low FODMAP
