Fried Rice

Ingredients for 2:

2 tbs garlic oil

1 tbs hoisin 

1 tbs oyster sauce 

1 tbs soy sauce 

1/2 carrot, finely diced 

1/2 capsicum, finely diced 

1/8 cup peas 

2 eggs

Greens tips of spring onions , finely sliced

2 cups of cooked rice (you can use leftover rice or cook it a few hours before and place in the fridge so it starts to dry out)

 

Method:

1. Add half of the oil to a frying pan and heat on medium and scramble the eggs with a wooden spoon. Once scrambled remove from pan

2. Add the rest of the oil and stir fry the vegetables for 5 minutes or until they are slightly soft

3. Add oyster sauce and hoisin sauce to the vegetables and continue to cook 

4. Move vegetables to one side in the frying pan and add cooked rice to the other side. Fry the rice and stir with a wooden spoon

5. Add the soy sauce to the rice and stir it all together with the egg

6. Serve with the green tips of the spring onions
