French Toast with Blueberry and Maple Syrup 

Ingredients to serve 1:

2 eggs

2 slices of sourdough bread

100ml milk, either lactose free or soy protein milk

1 tsp vanilla essence

sprinkle of cinnamon

1 tbs sugar

butter for frying

200g traditional Greek yoghurt

2 tsp maple syrup

10 blueberries



1. In a bowl, whisk eggs milk, vanilla essence, cinnamon and sugar

2. Add bread and soak on both sides

2. Over medium heat, fry eggy bread in a frying pan with a small amount of butter until bread is crispy. Flip and fry the other side (may need 5 minutes each side)

3. Serve with Greek yoghurt, maple syrup and some blueberries



This recipe is low fodmap in the above quantity.
