Chocolate pancakes

Ingredients for 2:

1 cup gluten free flour (ensure its low FODMAP - Woolworths Free From Gluten brand is)

3 tbs sugar

1 egg or egg replacer if you're allergic to egg 

1 1/2 cup soy protein milk (So Good is low FODMAP) 

1/2 tbs cocoa 

Nuttelex (for the frying pan)


Sauce this was sort of thrown together (estimate measurements below)

2 tbs coconut oil 

1/2 tbs cocoa 

1 tbs maple syrup 

2tbs soy milk (soy protein milk)

1 tbs water 

20 blueberries .



1. Whisk flour, milk, egg or egg replacer, sugar and coconut syrup 

2. Heat frying pan over medium heat

3. Place 1/2 tsp Nuttelex in frying pan and place a spoon of mixture in frying pan and cook until bubbles form. Flip and cook for 20 seconds or until brown. 

4. Complete process for rest of pancakes

5. In a saucepan over medium heat, add all sauce ingredients and cook until combined and cook for 3 minutes

6. Stack pancakes and serve with sauce .
