Chickpea and Vegetable Soup


Ingredients to serve 2:

1L veggie stock (Massels 7 stock cubes or Fodmapped For You)

2 spring onion green parts only, thinly sliced (save some for a garnish) 

1 potato, diced

1/2 cup wombok, shredded 

1 sweet potato, diced 

1/2 cup chickpeas 

1 spring oregano and thyme, thinly sliced

2 tablespoons soy sauce 



1. In a saucepan, bring stock, thyme, oregano and spring onions to the boil. 

2. Add potato and sweet potato to the stock and cook for 5 minutes 

3. Add chickpeas and soy sauce and stir

4. Once the potato and chickpeas are cooked stir vigorously to break apart some of the potato to thicken the soup

5. Add the wombok and stir through

6. Dish up and sprinkle some more shallots on the top 

7. Enjoy as is or with with some crunchy sourdough bread
